the key to a fudgy moist brownie is not to overbake them. If you
wait until you stick in a knife and it comes out clean, the
brownies will be dry. Brownies continue to bake even after
you've taken them out of the oven, so they should be removed
from the oven when you still have fudgy crumbs on your tester.
