Salmon Pesto Rolls

This recipe is just pure indulgence! I know it's blasphemy to some, but I like sautéing the soft smoked salmon before eating it - in butter, of course. Try substituting shrimp or cooked scallops in this recipe. 

1 pound thinly sliced cold smoked salmon
3 ounces softened cream cheese
1/4 cup pesto
Sliced avocados, brushed with lemon juice
Fresh croissants or tortillas

Mix cream cheese and pesto. Use as a condiment with the salmon, avocado, and croissants.

Or spread on tortillas, top with other ingredients and roll up to make an easy-to-eat wrap. Makes 4 to 6 sandwiches
