Baked Hoagies
Serve with your favorite soup for delicious lunch or dinner. 1 Red Bell Pepper (or Poblano, Banana) 1 teaspoon Olive Oil 4 slices Deli-Style Cheese (whatever you like) 12 thinly sliced Deli Meats (whatever you like) 1 small can Black Olives, sliced, optional 1 Garden fresh tomato, sliced 12 Dill Pickle slices Lettuce or Spinach leaves 4 Hoagie Style Bread Loafs, halved 2 tablespoons Butter, melted
Dressing: 3/4 Cup Mayonnaise 2 tablespoons Spicy Mustard 1 tablespoon Lemon Juice
Place bell pepper on baking sheet and drizzle with olive oil. Broil in oven until browned. Remove from oven. When cool enough to handle, thinly slice pepper. To assemble sandwich, place meet on one side of roll, topping with cheese, cooked peppers, olives, tomato slices, pickles, spinach leaves & dressing. Top with remaining roll. Brush top with melted butter. Wrap each sandwich with aluminum foil and place on baking sheet. Bake at 400 for 15 minutes. To make dressing, mix mayonnaise, mustard & lemon juice.
Here's a place to squeeze in your veggies: Add thinly sliced Cucumber or a few Alfalpha Sprouts Have fresh Herbs? Add a splash of Basil leaves or Parsley Like Onions? Broil sliced onions with bell pepper and olive oil.
