No Peek Baked Chicken
Serves 6-8
1 1/2 cups regular rice
1 can mushroom soup
1 cup skim milk
8 pieces (about 2 lbs.) frying chicken, remove skin
1/2 envelope dry onion soup mix
1 can cream of celery soup
Sprinkle rice in a shallow pan. Heat soups and milk and pour over rice. Place chicken on top. Sprinkle dry onion mix over all. Cover with foil and seal well.
Bake at 325ºF. for 2 hours and 15 minutes. Let stand 10 minutes before serving.
