Minty Watermelon Salad w/Feta Cheese (4 points)
8 cups watermelon, seeded, diced, very cold
1/2 cup fresh mint leaves, chopped
3 tablespoons extra virgin olive oil
2 tablespoons lime juice
1 cup reduced-fat feta cheese, crumbled (4 oz)
ground black pepper, to taste
Toss the watermelon, mint leaves, oil and lime juice together in a large bowl just before serving. Arrange the salad on 6 plates and top with the feta. Add pepper to taste.
