Maple Bran Muffins
A deliciously fiber-rich way to start off your day .
Makes 8 servings
1 1/2 ounces wheat bran
2/3 cup low-fat (1%) milk
1/3 cup maple syrup
1/4 cup unsweetened applesauce
1 egg, slightly beaten
1 cup + 2 tablespoons all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground allspice
1/2 cup raisins
In large bowl, combine bran and milk; let stand 20 minutes. Stir in syrup, applesauce and egg. Preheat oven to 400o F. Spray eight 2 3/4" muffin cups with nonstick cooking spray. In medium bowl, sift together flour, baking powder, baking soda, salt and allspice. Add bran mixture, stirring until just combined; stir in raisins. Spoon batter evenly into prepared cups, filling each about two-thirds full. Bake 18- 20 minutes, until toothpick inserted in center comes out clean. Cool on wire rack 5 minutes. Remove muffins from pan; cool completely on rack.
