Diabetic Spinach Salad (7 points)
Dressing:
3/4 cup oil
1 tbsp. Accent
2 tsp. salt
4 tbsp. sugar (I use Splenda)
6 tbsp. rice vinegar
1 large package spinach
1 package cole slaw mix
6 green onions, sliced
pine nuts or almonds
ramen noodles
Clean spinach, take off stems and dry.
Mix spinach, cole slaw, green onion, nuts and noodles. Toss well.
Add dressing before serving.
Makes a large amount.
