Apricot-Chicken Roll-Ups
This dish is pretty enough for a party and couldn't be easier! Try it with orange spreadable fruit for a change of pace.
Makes 4 servings
3 tablespoons seasoned dried bread crumbs
Four 3-ounce skinless boneless chicken breasts, pounded thin
2 teaspoons canola oil
1/4 cup apricot spreadable fruit, melted
Preheat broiler. Spray broiler pan with nonstick cooking spray. Place bread crumbs on large sheet of wax paper. Brush 1 side of each chicken breast with 1/2 teaspoon of the oil; place oiled- side down on bread crumbs, pressing firmly to coat. Brush uncoated side of each chicken breast with one-fourth of the spreadable fruit. Roll breasts to enclose fruit; secure with wooden toothpicks. Place chicken rolls in prepared broiler pan; broil 4" from heat 6-8 minutes, until cooked through.
