Beef with Noodles (6 points)
1 lb. well-trimmed, boneless top sirloin, cut into 1-in. strips
1 teaspoon dark roasted sesame oil
2 tablespoons dry sherry
1/8 teaspoon crushed red pepper pods
1-1/2 tablespoons reduced sodium soy sauce
2 cups cooked linguine (break into fourths)
1/8 teaspoon ground ginger
1/4 cup chopped green onion tops or fresh cilantro
1 clove garlic crushed
2 tsp cornstarch
1/4 cup water
Combine sherry, soy sauce, ginger, garlic, sesame oil, and pepper pods.
Place beef steak in plastic bag; add marinade. Close bag securely and marinate 15 minutes. Pour off marinade; reserve.
Heat non-stick skillet over medium heat 5 minutes.
Add steak and cook 12 to 15 minutes for rare (140ºF) to medium (160ºF). Pour off drippings.
Dissolve 2 teaspoons cornstarch in 1/4 cup water and reserve marinade; add to skillet. Bring to a boil, stirring constantly. Stir in noodles. Spinkle with green onion.
