Easy Cherry Rum Balls
This recipes comes from Dancer and Graphic artist Martin James. Martin, who
originally comes from New Zealand, is now living with his wife and children in
Copenhagen as he is currently principal Dancer with The Royal Danish Ballet.
2 cups finely crushed vanilla wafers (40 to 50)
1 cup powdered sugar
1/2 cup finely chopped red candied cherries
1/4 cup rum
3 tablespoons corn syrup
2 tablespoons butter melted
1/4 cup powdered sugar
In medium bowl combine the crushed wafers, 1 cup powdered sugar, the cherries
and the pecans. Add the rum, syrup and butter and blend well. Shape into one
inch balls. Roll the balls in the 1/4 cup of powdered sugar. Cover tightly and
let sit for twenty-four hours for the flavours to blend.
