Chocolate Frosted Marshmallow Cookies

1/2 cup unsalted butter
1 cup brown sugar
1 egg
1/2 cup milk
1 tsp vanilla extract
1 1/2 cups flour
1/2 tsp baking soda
12 large marshmallows, halved crosswise.

Icing:
3 squares semi-sweet baking chocolate
1/4 cup unsalted butter

In a large bowl, cream butter and brown sugar. Add egg, milk, and vanilla, and continue beating until light and fluffy. Stir in flour and baking soda. On a lightly floured board, roll dough 1/4 inch thick. Shape cookies with a 1 1/2 inch round cookie cutter. Arrange on lightly greased cookie sheets and bake at 350 degrees for 6 minutes. Remove from oven and immediately place half a marshmallow, cut side down, on each cookie. Bake 2 more minutes until marshmallow sticks to cookie. Remove to wire racks to let cool. To prepare icing, in a small, heavy saucepan melt chocolate and butter. Stir to combine. (DO NOT LET BOIL) Spoon frosting over cookies, covering marshmallows.

TIP: Spoon frosting over cookies while the cookies are on a wire rack. Placing tin foil under the racks will catch the drips, allowing you to reuse the extra frosting if a lot falls. It also allows for cookies that look more smooth around the edges.
