Nut Chocolate Truffles

You can make this the day before you need them, but make sure to do more
than you think will be necessary - believe me, you'll need it! They're
delicious!

300 g (12 oz.) dark chocolate
2 dl (1 cup) whipping cream
2 tbs honey
1/2 dl (1/4 cup) chopped raisins
30 g (3/4 stick) butter or margarine
60 g (3/4 cup) chopped hazelnuts or almonds

Finely chop the chocolate and put in a bowl. Bring cream, honey, and raisins
to a boil and pour over the chocolate while stirring. Stir until the
chocolate has melted and the temperature is around 40C/70F. Add the butter and blend well. Fill the chocolate mixture in a dish and put in a cold place.

When set, you take it out and roll balls or cut out square pieces. Coat them
with the chopped nuts or almonds (they're even better if you first roast
nuts or almonds for a little while in a dry, hot frying pan).

Keep them in the fridge and serve them really cold.
