Apple Pie Muffins
This recipe came into being on a cool early fall Saturday morning when I was looking for something a little different for breakfast before embarking on the usual weekly set of errands. Everyone said it was a keeper, and with apples available year round you don't have to save it only for fall.
1 3/4 c Flour
1/4 c Sugar
1 T Sodium Free Baking Powder
3/4 c Skim Milk
1/4 c Egg Substitute
1/3 c Oil
1 t Cinnamon
1/2 t Nutmeg
1/4 t Ground Cloves
1 c Apples, Peeled And Chopped
Combine dry ingredients in a large bowl. Stir together milk, egg, oil and apples. Add to dry ingredients all at once and stir until just mixed. Spoon into muffin pans with paper liners or spayed with non-stick vegetable oil spray. Bake at 375 until golden, about 10-12 minutes.
Yield: 12 Servings
