Alsatian Onion Tart

1 (10-inch-square) puff pastry (thawed if frozen)
1 tablespoon butter or soy margarine
2 large onions, sliced thinly
1 cup shredded gruyere or muenster cheese
2 eggs, lightly beaten
2 cups light cream, milk or soy milk
2 teaspoons minced fresh thyme leaves
Salt and fresh-ground black pepper, to taste
Pinch nutmeg

Preheat oven to 325 degrees.

Roll out dough to fit a 10-by-16-inch baking sheet with raised sides.
Dough should fit up the sides of the pan. Trim any excess dough or fold
under; lightly crimp edge. Bake 15 minutes until crust just begins to
rise and brown. Remove and cool. (Tart can alternatively be made in a
9-inch round pan.)

In a sauté pan over medium heat, melt the butter. Add onions and cook,
stirring occasionally, until golden brown. Place onions over crust and
spread uniformly. Scatter shredded cheese over onions

Mix eggs and cream and pour over onions. Shake pan to distribute
mixture evenly. Season surface with minced thyme, salt, pepper and nutmeg.

Bake 25 to 30 minutes until crust is well browned and custard is set.
Test for doneness by inserting a toothpick or skewer into custard. It
should be dry and clean when removed. Makes 6 to 8 appetizer servings.
