Classic Pesto

This classic pesto is simple and delicious with pasta, and dresses up grilled
chicken or fish. You can also mix it into your favorite vinaigrette or use it as
a sandwich spread. The pesto can prepared up to 3 days ahead of time.
Makes about 1 2/3 cups pesto
2 cups firmly packed basil leaves
10 garlic cloves, peeled, smashed
3/4 cup extra-virgin olive oil
1 cup grated Parmesan cheese
2 oz pine nuts (about 1/2 cup)
1 tsp each salt and black pepper
In food processor, pulse basil and garlic until coarsely chopped. With machine
running, slowly pour oil through feed tube and process until blended. Add
remaining ingredients; process until blended and smooth.
