Chicken And Fruit Salad

Yield: 4

2 cups Cooked boned chicken
4 cups Torn assorted lettuce
1 cup Mandarin orange segments
1 cup Fresh strawberries
1/2 cup Currants
1/2 cup Cubed cheddar cheese
4 tbsp Margarine
1 tbsp Cinnamon

Melt the margarine in a skillet and sauté currants and cinnamon for about 5 minutes. Cube the chicken and cheese if you have not already done so. Drain the mandarin oranges and slice the  strawberries. Place all ingredients in a glass bowl and toss with the following dressing:

1/4 cup salad oil

1/4 cup apple cider vinegar

2 tbsp. minced dried onion

about 3 tbsp. sugar

shake the dressing well

If you are not planning to serve this salad immediately, keep the ingredients separated and assemble just before serving. Serve with fresh rolls and your favorite beverage. You may also substitute ham or turkey.)
