Macadamia Apricot & White Choc Truffles

Makes: approximately 50
1/2 cup chopped dried apricots
2 Tbsp brandy
300 g NESTLÉ White Melts
30 g butter
1/2 cup NESTLÉ Sweetened Condensed Milk
60 g macadamia nuts, chopped
1/2 cup desiccated coconut
250 g NESTLÉ White Melts, extra, melted
50 g NESTLÉ Dark Melts, melted
Combine apricots and brandy, stand 30 minutes. Combine NESTLÉ White Melts and
butter in pan,
stir over low heat until melted. Combine NESTLÉ Sweetened Condensed Milk, nuts
and apricot
mixture in bowl, add NESTLÉ White Melts mixture, stir well, refrigerate 1 hour.
Roll heaped teaspoonfuls
of mixture into balls, coat in
coconut, refrigerate 30 minutes. Coat balls in extra NESTLÉ White Melts,
refrigerate
until set. Drizzle with NESTLÉ Dark Melts, allow to set. Store truffles in
refrigerator.
