Deep Fried French Toast

My husband & I love to go to The Pickle Barrel restaurant here in Canada. He
has ordered their Deep Fried French Toast a couple of times so of course I
had to try and duplicate it. I took two recipes & adapted them to make this
breakfast treat.
I took some country white bread* & sliced it about an 1" thick. Diagonally
quarter the slices, then dipped it in this batter.
Batter
1 Egg
1 - 1 1/4 C. Water
1/2 tsp. Salt
2 tsp. Sugar
1 tsp. vanilla extract (you can also use a maple flavouring extract)
1-1/2 tsp ground cinnamon
1 tsp grated nutmeg
1 1/2 cups Flour
1 tbsp. Baking Powder
In a large kettle heat 2 inches of oil over moderate heat until 375°F. In a
large bowl whisk together the remaining ingredients. Dip bread wedges in the
batter (DO NOT LET BREAD SOAK) let excess drip off. Fry wedges in hot oil
turning frequently, until golden brown on all sides, about 2 minutes.
Transfer to paper towels to drain. Dust with confectioner's sugar and serve
with warm maple, strawberry or raspberry syrup. Or simply serve with some
fresh fruit or top it off with warm apple pie filling.
* I have tried this with raisin and Challah bread as well. You can use any
bread that you like.
Variations: For my husband who loves "Grilled Cheese French Toast", I will
take two slices of bread and place a slice of cheddar cheese in the middle.
Top with the other slice of bread, diagonally quarter the slices, then dip in the batter & deep fry.
This batter can also be used to make Monte Cristo's like they do at the Blue
Bayou Restaurant at Disneyland.
