Bibb Salad with Raspberry-Maple Dressing

¼ Cup raspberry vinegar
2 Tablespoon maple syrup
2/3 Cup (or less) canola oil
2 heads bib lettuce- torn
1 small purple onion- sliced and separated
1 Cup (4 oz.) crumbled blue cheese
¼ Cup pine nuts (walnuts toasted)
Sliced Strawberries
Raspberries
Orange Slices
Combine vinegar and syrup- gradually add oil, string with a wire whisk- set
aside.
Mix remaining ingredients in a bowl- drizzle with dressing that was set aside.
Top with sliced strawberries, raspberries, and orange slices
