Apple Chip Cake

1 1/2 cup oil
1 teaspoon baking soda
3 eggs
1 teaspoon vanilla
2 cups sugar
3 cups diced raw apples
1 teaspoon salt
1 cup black walnuts
1 teaspoon black walnut flavoring
1 cup raisins
3 cups flour
Blend oil, sugar, eggs and flour. Save enough flour to coat apples, nuts and
raisins. Blend all ingredients. Bake in greased and floured tube or Bundt pan at
325 degrees F. for 1 hour and 45 minutes. Cool until you can handle the pan.
Loosen edges with knife and invert onto serving plate. Cool the rest of the way.
Serve as is or with ice cream or Cool Whip.
