Crab and Mushroom Casserole

Serves 6
Ingredients
1 pound mushrooms, sliced
8 tablespoons butter, divided
1/3 cup flour
10 ounces chicken broth
1-1/2 cups medium or light cream
salt and pepper, to taste
1-1/2 pounds fresh crabmeat OR
2 cans canned crabmeat
buttered bread crumbs
American cheese, grated
Saute mushrooms in 2 tablespoons butter for 5 minutes and set aside.
Melt 6 tablespoons butter. Remove from heat and blend in flour. Add
chicken broth, cream, salt and pepper. Return to heat and cook until
thickened and smooth.
In 6-cup casserole arrange in alternate layers the mushrooms, sauce
and crabmeat. Sprinkle with bread crumbs and cheese. Freeze.
To serve: Put frozen casserole in 325 degree oven. Bake until brown
and bubbly, 45 to 60 minutes. Defrosted casserole bakes at 350
degrees for 30 minutes.
