Colored Cookies

1/2 cup butter 
1/2 cup granulated sugar 
1/4 tsp. lemon rind 
1/4 tsp. salt 
1 1/4 cups all-purpose flour 
1/2 tsp. vanilla 
1 egg 
Food coloring 

Place butter and sugar together in a large mixing bowl or food processor and beat until creamy. Add egg, vanilla, lemon rind, and salt. Mix well. Gradually and mix until dough begins to form. 

Shape dough into several balls. Color each ball differently, using the food coloring. Don't forget to mix drops of colors together to make new colors. 

Wrap each dough ball separately in plastic wrap and chill for at least 2 hours. 

Preheat oven to 375 degrees. Roll dough ball into a lightly floured surface until it is about 1/4" thick. Cut out shapes with cookie cutters and place on a lightly greased baking sheet. Bake for 10-12 minutes or until cookie edges are golden.
