Chicken And Mango With Citrus Dressing


1 1/2 pounds romaine lettuce -- divided
2 cups cooked chicken -- cubed
1 cup diced fresh mango

1/2 cup fresh mint -- chopped

1/2 cup fresh cilantro -- chopped
1 small cucumber -- peeled, seeded, diced

 

Citrus Dressing
3 tablespoons soy sauce

1/4 cup orange juice
1 tablespoon fresh lime juice
1 teaspoon dark sesame oil
1 teaspoon sugar

Shred 3 lettuce leaves, reserving remaining lettuce. Combine shredded lettuce, chicken, and next 4 ingredients in a large bowl. Add 1/3 cup Citrus Dressing to chicken mixture, and toss to coat. Cover and chill 30 minutes. Serve over reserved lettuce leaves, and drizzle with remaining Citrus Dressing. Citrus Dressing: Whisk together all ingredients until blended. Makes 1/2 cup.

Bonus: For Shrimp and Mango With Citrus Dressing, substitute 3/4 pound peeled and cooked shrimp for 2 cups cubed chicken.
