Brown Sugar Pudding
Prep: 10 min, Cook: 10 min, plus chilling time.
1 cup brown sugar, packed
3 Tbs. cornstarch
2 Tbs. all purpose flour
3 cups low fat milk
3 eggs
2 tsp. vanilla extract
2 Tbs. unsalted butter
Combine brown sugar, cornstarch and flour in a saucepan. Add milk and eggs.
Whisk constantly over high heat until mixture begins to thicken. Remove from
heat. Stir in vanilla and butter until melted. Pour into individual dessert
cups. Chill.
