Beef and Pepper Kebabs
Makes 2 servings
1/2 lb (225 g) boneless beef top sirloin steak, 1-inch (2.5-cm) thick
1 small green, red OR yellow bell pepper, cut into 1-inch (2.5-cm) pieces
4 large mushrooms
1 medium onion, cut into quarters
1 medium yellow zucchini, cut into 1-inch (2.5-cm) pieces
For marinade:
1 tbsp (15 mL) vegetable oil
2 tsp (10 mL) fresh lemon juice
2 tsp (10 mL) water
1/2 tsp (2 mL) honey
1/4 tsp (1 mL) dried oregano leaves, crushed
1/8 tsp (0.5 mL) pepper
Preheat barbecue or oven broiler. Cut beef steak into 1-inch (2.5-cm) cubes.
In large bowl, whisk together marinade ingredients; add beef, tossing to coat.
Alternately thread steak, bell pepper, onion, zucchini and mushrooms onto 2 12-inch (30-cm) skewers.
Place kebabs on oiled rack in barbecue or on rack in broiler pan so beef is 3 to 4 inches (7.5 to 10 cm) from heat. Broil for 8 to 10 minutes for medium-rare to medium doneness; turn occasionally. Season with salt, if desired.
