Bavarian Rice Dessert
Ingredients:
1 1/2 pints milk
Lemon peel
1/2 cup rice
1/2 tsp. salt
1/2 cup sugar
1 tsp. flavoring
1 ounce (2 tbsp.) granulated gelatin (Knox)
1/2 cup cold water
1 cup heavy cream

Method:
Put the milk and a few thin cuts of lemon peel into a double boiler. When it is
hot, stir in the well-washed rice and salt. Cook until the rice is perfectly
tender. The milk should be nearly absorbed, leaving the rice very moist. Add to
the hot cooked rice the flavoring, the sugar and gelatin, which has been soaked
in the cold water, and mix carefully. When the mixture is beginning to set, fold
in the cream, whipped stiff. Pour into a mold and chill. Serve with sweetened
crushed strawberries. The white mold with red sauce makes an attractive
combination.
