Apple Coffee Cake

 

2 cups unsifted flour
1 1/2 cups sugar
2 tsp. cinnamon
2tsp. baking soda
1tsp. salt
1/2 cup oil
2 eggs beaten
1/4 cup brewed Gevalia Kaffe (or dark brewed coffee)
1 1/2 tsp. vanilla
2 1/2 cups sliced peeled apples
1 cup chopped nuts

Mix dry ingredients in a large mixing bowl. Stir in wet ingredients and blend. Then stir in apples and nuts. Pour into agreased and floured 9-inch tube pan. Bake at 350 degrees for 60minutes, or until cake tester comes out clean. Cool 10 minutes,remove, serve warm or coll sprinkled with confectioners sugar.
