Whole Citrus Marinade
4 whole lemons
2 whole limes
1 whole orange
2 tablespoons sugar
2 shallots, minced
2 cloves garlic, pressed
2 tablespoons ginger, fresh, peeled and grated
1 teaspoon sea salt
1/2 teaspoon black pepper
1 can olive oil
Juice the lemons, limes and orange into a large non-reactive bowl. Add sugar,
shallots, garlic, salt and pepper, stirring to dissolve the sugar. Slowly whisk
in the oil or add ingredients to the bowl of a food processor and add oil in a
thin stream until emulsified. Use for chicken, pork or beef.
