Taco Meatballs-Low Carb Recipe
Ingredients:
1-1/2 pound lean ground beef
One package taco seasoning mix
One green onion, finley diced
Two eggs
One clove garlic, minced (optional)
One block sharp cheddar cheese, cut into small cubes
Preheat the oven to 425-degrees.
Beat eggs and mix all ingredients except the cheese together.
Mold a tablespoon of meat around a cube of cheese to form a small shaped
meatball. Repeat with all meat.
Place on edged cookie sheet (sprayed with nonstick cooking spray) and bake at
425-degrees for seven to ten minutes or until meat is done and cheese has
melted.
Recipe makes 10 to 15 servings; less than one carbohydrate per meatball.
