Sweet Potatoes Au Gratin

6 medium sweet potatoes

2 1/2 tbsp brown sugar

2 tsp sugar

3/4 tsp salt

dash pepper

1/3 cup cracker crumbs

1/3 cup shortening, melted

 

Parboil sweet potatoes about 8/10 minutes. Drain. Cut into 1/4" slices. Combine sugars, salt & pepper. Place a layer of sliced potatoes on the bottom of a greased casserole dish: sprinkle with part of the dry ingredients & add part of the shortening. Continue till all ingredients are used. Top with the cracker crumbs & bake for 30 minutes at 375°F.
