Sausage Stuffed Tomatoes
This recipe sounds hard, but it’s incredibly easy, and makes you think
you’re eating at a 5 star restaurant. Also, these are so good if you dip your
bites in your favorite low carb sweet and sour or sweet type of sauce.?
1 lb sausage (I’m a wimp, so I use mild sausage, you can use hot if you
like some spice)
4 oz chive or vegetable flavored cream cheese
4 large yellow or orange tomatoes that are very firm
1 medium onion chopped
4 oz mozzarella cheese (slices)
Preheat oven to 350. Brown sausage and onions together. (best for clean up to use a non-stick pan) While that’s cooking, cut the tops off the tomatoes, and spoon out the middle of them like you would a pumpkin at Halloween. Once sausage and onions are cooked, drain fat, and return to pan. Mix cream cheese into sausage….once sausage and cheese mixture is well mixed together, spoon the mixture into the middle of the tomatoes, and place the slices of mozzarella over top of them, and bake in the oven until cheese is melted to a golden brown (don’t overcook, or your tomatoes will be mushy) I usually leave mine in there about 10-15 minutes ?)
