Roasted Garlic Potatoes

8 new potatoes (the red ones), cleaned and scrubbed

4 cloves of minced garlic

1/4 cup of olive oil

1/2 teaspoon of dried Rosemary- optional

Salt and pepper to taste

 

Preheat oven to 400 degrees Fahrenheit.  Cut each potato into wedges. Each potato should yield about 6 wedges.  Place wedges, garlic, olive oil and seasonings into a pan, toss or mix the potatoes with your hands to coat evenly. Make sure the wedges lay flat in the pan- no layering. Place in oven without covering.  Roast for about a half hour or until the potatoes are fork tender.  Turn the mixture a couple of times during cooking.
