Potatoes in Sour Cream

2 lbs potatoes

1 onion, minced

2 tbsp butter

4 tbsp medium grated cheese

4 tbsp bread crumbs

1 cup sour cream

2 eggs

salt & pepper to taste

 

Scrub the potatoes & boil in water until tender. Drain, dry, peel & slice in thin slices. Melt the butter & cook the minced onions till golden brown. Put the potatoes in a baking dish, add onion, bread crumbs & cheese. Beat the eggs & stir in the sour cream. Pour over the potatoes & bake at 350°F for 15/20 minutes, until well heated & slightly brown on top.
