Mushroom Burgers
4 to 6 servings
1½ pounds lean ground beef or uncooked ground chicken or turkey
1 garlic clove, peeled and minced
½ to 3/4 cup coarsely chopped fresh mushrooms, or 1 (2-ounce) can mushrooms stems and pieces, drained
1 tablespoon minced peeled onion or green onion (include some green tops)
1 tablespoon reduced-sodium soy sauce or to taste
Freshly ground black pepper to taste
In a medium bowl, combine all ingredients, mixing well. Shape mixture into 4 to 6 patties, about 1½ inches thick.
Pan-fry, broil, or grill burgers as desired, about 6 to 8 minutes total for medium rare and about 8 to 10 minutes total for medium-done burgers, turning each once. Pan-fry burgers in a large heavy skillet lightly coated with non-caloric vegetable cooking spray over moderate heat. Broil burgers on a rack coated with non-caloric vegetable cooking spray in a broiler pan about 6 inches from heat source. Grill burgers over medium hot (charcoal) coals or medium setting of a gas grill, about 6 to 8 inches above heat source.
