Meatloaf w/Garlic Mashed Potatoes
1 pound ground vealPotato Topping:
2 cups prepared mashed potatoes
2 tablespoons thinly sliced green onions
1 clove garlic, crushed
½ cup shredded Cheddar cheese
Heat oven to 375º F. Combine meatloaf ingredients, ½ teaspoon salt and ¼ teaspoon pepper, mixing lightly but thoroughly. Put veal mixture into 8-inch square baking dish. Bake 20 to 25 minutes or until center is no longer pink. Carefully pour off drippings.
Combine potatoes, onions and garlic. Spread over meatloaf. Sprinkle with cheese. Broil 3 to 4 inches away from heat for 2 to 3 minutes or until top in lightly browned. Cut into 4 squares.
