Lemon Herb Grilled Veal Chops
4 veal rib or loin chops, cut 1-inch thick
4 slices firm, ripe tomato, approx. 1-inch thick
salt (optional)
Marinade and/or Sauce:
1 tsp. freshly ground black pepper
3 TBS. fresh lemon juice
3 TBS. olive oil
3 cloves garlic, quartered
2 tsp. dried oregano leaves, crushed
In bowl of food processor, place marinade ingredients and process to blend. Reserve 1 TBS. Place veal chops in shallow dish and spread remaining marinade on both sides of chops. Cover; marinate in refrigerator up to 2 hours. Spread reserved marinade on one side of each tomato slice.
Place veal on grill over medium coals. Grill to desired doneness, turning once. (12 to 14 minutes uncovered or 10-12 minutes covered for medium) Place tomato slices on grill during last 6 minutes of grilling time. Grill until heated through turning once. Season veal and tomatoes with salt after grilling as desired. Makes 4 servings (205 calories per 1/4 of recipe).
