Greek Mini Burgers on Cucumber Rounds

Makes 12 pieces

1/2 lb (225 g) ground lamb OR beef

1 large egg

1 tbsp (15 mL) chopped fresh mint

1 tbsp (15 mL) chopped fresh oregano

2 garlic cloves, chopped

1/4 cup (60 mL) bread crumbs

1 tbsp (15 mL) lemon juice

Salt and freshly cracked pepper, to taste

1/2 cup (125 mL) tzatziki (spiced yogurt, sold ready-made in supermarkets)

12 slices English cucumber, cut (1/4 inch (5 mm ) thick

Small sprigs fresh mint OR oregano, for garnish

Olive slices, for garnish

Combine meat with the egg, mint, oregano, garlic, bread crumbs, lemon juice, salt and pepper. Mix well. Form into small patties about 2 inches (5 cm) wide and 1/4-inch (5 mm) thick.

Pan-fry, broil or grill patties until cooked through, about 2 to 3 minutes per side. (Patties can be cooked ahead, cooled, stored in fridge and reheated when needed.)

Spoon a little tzatziki on each slice of cucumber; place a burger on top. Top with a little more tzatziki sauce; garnish with a mint or oregano sprig and an olive slice.
