Fried Venison Tenderloin and Gravy
Venison Tenderloin cut into thin cutlets
Seasoned meat tenderizer
2 Cups of flour mixed
4 tsp. of seasoned salt
Shortening enough to cover the bottom of your skillet
4 Cups of this mornings coffee
Tenderloin cutlets should be wetted a little. Lightly sprinkle with seasoned
meat tenderizer. While these sit, melt shortening in skillet. Heat until
smoking, roll cutlets in flour real good. Now place in skillet about 5-6 at a
time depending on the size of the skillet. These should start sizzling
immediately. Don't turn these until the cutlets are browned on one side, and
bloody on the top. Turn cutlets and let these cook another 5-7 minutes. While
the cutlets are frying, take your morning coffee, at least 4 Cups and pour into
your pressure cooker. Add enough water to fill about 1/3 of the way up. As your
meat gets through frying, add it to the pressure cooker. Drain shortening. Add
the fried stuff in the bottom of your skillet to pressure cooker. Pressure cook
for 15 minutes. Open, stir in a little flour and water mixture. Serve with hot
biscuits, mashed or onion fried potatoes.
