Cream of Peanut Soup
This is wonderful when serving ham for dinner.
1 medium onion, chopped
2 ribs celery, chopped
1/4 cup butter
1 Tbsp. flour
2 qts chicken stock
1 cup smooth peanut butter or more if you like
2 cups light cream
chopped peanuts
Saute onions,& celery in butter till soft, not brown. Stir in flour and mix
until well blended then add the stock stirring constantly and bring to a boil.
Add peanut butter and cream stirring till blended thoroughly. Return to low
heat and keep warm until ready to serve, Garnish with chopped peanuts.
