Country Stuffed Pork Chops

Ingredients:
1/2 cup celery, chopped
1/2 cup onions, chopped
1/2 cup green pepper, chopped
1/2 lb breakfast sausage, crumbled
cinnamon and cloves
1/2 cup apples, chopped
8-10 slices day old bread, cubed
2 eggs 1/4 cup sherry
thyme, salt and pepper to taste
6 double pork chops with pockets
paprika
Saute celery, onions, green peppers and sausage in butter for 15-20 minutes.
Sprinkle a little cinnamon and cloves over the apples. Combine vegetable mixture
with the bread cubes. Add eggs, apples and sherry. Season with a dash of thyme
and salt and pepper to taste.
Stuff the chops and bake at 325 degrees for one hour. Baste with juices and
sprinkle with paprika.
Serves 6.
