Chuck Wagon Packets
You need to start this grilled one dish recipe the night
before so the meat marinates and becomes tender and flavorful.
1 cup ketchup
2 Tbsp. steak sauce
1 Tbsp. Worcestershire sauce
1 Tbsp. brown sugar
4 4-oz. pieces top round steak, 1/2" thick
4 unpeeled potatoes, cut into 1/4" slices
1/4 tsp. salt
1/4 tsp. pepper
4 slices red onion
4 ears fresh sweet corn, husked
In 2 quart baking dish or zip lock heavy duty plastic bag, combine ketchup, steak sauce, Worcestershire sauce and brown sugar. Add steaks and turn to coat. Cover dish or seal bag and refrigerate overnight, turning twice. Make sure you put the plastic bag, if using, inside a baking dish to prevent any spills.
Heat grill. Cut 4 18x12" pieces of heavy duty foil and grease center of one side. Drain steak, reserving marinade. On the greased area of each foil rectangle place 1/4 of the potato slices and sprinkle with salt and pepper. Place 1 steak on top of potatoes and spoon 2 Tbsp. of the marinade over the meat. Top with onion slice and place corn next to steak. Wrap packets thoroughly using double fold seals.
Place packets, seam side down, on heated grill 4-6" from medium high coals. Cook 40-50 minutes or until meat and vegetables are tender, turning after 15 minutes and rearranging packets frequently. In small saucepan, bring remaining marinade to boil and boil for 2 minutes. Serve with steaks. 4 servings
