Brandy Cookies
These brandy cookies come from an old newspaper clipping.
1/2 cup molasses
1/2 cup butter
1-1/4 cups sifted flour
1/4 teaspoon salt
2/3 cup sugar
1 tablespoon ginger
3 tablespoons brandy
In a saucepan, heat molasses to boiling; add butter. Add sifted dry
ingredients slowly, stirring constantly; add brandy. Drop by half-teaspoonfuls 3
inches apart onto greased baking sheets. Bake at 300° for about 12 minutes.
Cool in pan 1 minute; remove from pan with spatula and immediately roll around
handle of wooden spoon. Do not bake more than 8 at one time. If removed from pan
too soon, cookies will break; if too cool, they will not roll. Keep the brandy
cookies in an airtight container.
Makes about 4 to 5 dozen brandy wafer cookies.
