Basic Barbecue Chicken Pizza

Makes two 12-inch pizzas
 
2 whole skinless, boneless chicken breasts, sautéed in olive oil, or
grilled, cut into 1⁄4-inch wide strips or cubed
1 cup barbecue sauce
1 cup chopped red onion, blanched
1 1⁄2 cups shredded smoked mozzarella
 
In a large bowl, toss the cooked chicken with the barbecue sauce to coat. Divide the chicken between the two pizza shells. Sprinkle 1⁄2 cup of the red onion evenly over each pizza. Sprinkle an equal portion of the cheese on each pizza. Bake.

Cook's Notes: A variation would be to paint a layer of barbecue sauce on the crust, sprinkle on the onion, layer on the chicken (coated with barbecue sauce) and add the cheese.

Also, blending provolone and smoked mozzarella or provolone and mozzarella on an equal basis will add more flavor interest.
