Barbecue Meatloaf

This is a tangy barbecue meatloaf, made with tomato sauce, ground beef, crackers, brown sugar, and a little vinegar.

 

1 pound ground beef

1/2 cup finely chopped onion

12 saltine crackers, crushed

1/2 teaspoon salt

black pepper

8 ounces can tomato sauce, divided

2 egg whites

2 tablespoons vinegar

1/4 teaspoon dry mustard

2 tablespoons brown sugar

1/2 cup water

Mix together meat, chopped onion, crackers, salt and pepper, egg whites and 1/2 cup of the tomato sauce. Form into a round loaf; place in a pie plate or 9-inch square baking pan. Mix together remaining tomato sauce, vinegar, mustard and sugar; pour over meat loaf; pour water into pan. Bake in a preheated 350° oven for about 1 hour, until done.
