Banana Crumb Muffins
1-1/2 cup all purpose flour
1 tsp baking soda
1 tsp baking powder
½ tsp salt
3 lrg ripe bananas, mashed
¾ cup white sugar
1 egg, lightly beaten
1/3 cup butter, melted
Topping:
1/3 cup packed brown sugar
1 tbsp all-purpose flour
1/8 tsp ground cinnamon
1 tbsp cold butter
In large bowl, combine dry ingredients. In another bowl combine bananas, sugar,
egg and butter; mix well. Stir into dry ingredients just until moistened. Fill
greased or paper-lined muffin cups ¾ full.
For Topping: Combine brown sugar, flour and cinnamon; cut into butter until
crumbly. Sprinkle over muffins.
Bake 18 to 20 minutes at 375 degrees or until muffins test done. Cool in pan 10
minutes before removing to a wire rack.
