Bacon and Caramelized Onion Quiche
Bake
pastry shell in preheated 375 degree oven for 8 to 10 minutes; cool while
preparing filling.
Reduce
heat to 350 degrees.
In
large skillet, saute bacon until crisp; drain, crumble, and set aside.
Add
butter to bacon drippings. Add sliced onions and saute until soft and lightly
browned. Remove from skillet and cool.
Mix
together eggs and sour cream until smooth; season with salt and pepper.
To assemble quiche:
Place
half of crumbled bacon evenly in pastry shell.
Spread
sauteed onion evenly over bacon.
Pour
in egg mixture.
Add
remaining bacon and shredded cheese evenly on top.
Bake
until desired consistency (30 to 40 minutes.)
Serves 6.
