Alfredo Spinach Stuffed Portobellas

1 4oz can spinach, very well drained
1 slice low carb bread, crumbled
1/4 c. bottled Alfredo sauce (may need a little more if mixture seems dry)
1/4 c. Parmesan cheese
Salt and Pepper to taste
2 large Mozzarella cheese slices, cut into thirds
2 T. Olive Oil

Scrub mushrooms and remove stems. Mix spinach, Alfredo Sauce, bread crumbs and Parmesan cheese. Salt and Pepper to taste. Stuff mixture evenly into Portabella Mushrooms. Set mushrooms in shallow dish that has been drizzled with olive oil (prevents bottoms from sticking when grilled). Top with Mozzarella cheese. Grill over direct heat (gas or charcoal) about 5-7 minutes until centers are hot and cheese is melted.

Approx 2-3 carbs per mushroom
