Zucchini Relish
Grind 10 cups zucchini unpeeled with 4 cups onions. Mix with 5 tablespoons salt.
Let stand overnight. In separate container grind I green and 1 red pepper. Set
aside.
Make paste of:
2 1/2 cups vinegar
1 teaspoon nutmeg
1 teaspoon cornstarch
2 teaspoon celery seed
5 cups sugar
1 teaspoon turmeric
1 teaspoon dry mustard
1/2 teaspoon pepper
Add paste to zucchini and pepper mixtures. Simmer 10 minutes. Put in sterilized
jars. Seal
