Potatoes Deluxe

Serves 12
6 potatoes, diced
3 onions, diced
dashes of salt, pepper and paprika
5/8 cup oil
12 green onions, finely chopped
12 mushrooms, thinly sliced
3 tomatoes, diced
1 1/2 bunches spinach, washed and drained
3/4 qt cheddar cheese, grated
1 cup guacamole
Steam the potatoes until just tender, approximately 10 minutes. Mix the steamed
potatoes with onion, salt, pepper and paprika. In a large frying pan, heat 2/3
of the oil until bubbly. Add the potatoes and fry them over high heat until
golden brown, flipping frequently, for about 5 minutes. Turn heat low and cover
to keep hot.
In a small frying pan, heat the remaining oil and add the green onions, and
mushrooms and saute until tender, approximately 3 minutes, stirring frequently,
then add potatoes. Mix well.
Top the potatoes with tomatoes, spinach and cheese. Cover and cook on low heat
until spinach has wilted and the cheese melts. To serve, top each portion with
heaping spoon of guacamole.
