Potatoes w/ Cheese & Onions

3 lge potatoes peeled and cut in quarters
5 lge eggs
1/4 cup whipping cream
3/4 cup grated Swiss cheese
3/4 cup grated Cheddar cheese
1 med onion finely chopped
3 tsp baking powder
1/2 cup melted butter
1/2 cup sour cream
1/2 cup finely chopped green onions

In a med sized cooking pot add potatoes, cover with water and boil until cooked.
When done drain water and discard. Mash potatoes and set aside. Preheat oven to 450o. Beat eggs, add whipping cream, salt and whisk until blended. Add mashed potatoes and blend well. Add both cheeses and onions. Add baking powder and mix well. Pam a 9x9 in baking dish and pour potato mix in then level. Bake 35 min. The cake will rise then settle when removed from oven and cooled for 5 min before cutting.


Cut the cake into 3 in squares and serve with melted butter,green onions and a dollop of sour cream.
